According to various sources, including the late, great James Beard (New Fish Cookery, @1976), the dish was invented by one of the fin du siecle chefs at the Palace Hotel. Or maybe the St. Francis Hotel. or maybe the Bohemian Restaurant in Portland, Oregon. Anyway, who cares!

Lucky you! We are planning on crab for New Year's but maybe I need to get one before that, just to relish!
I had crab on Friday, crab on Saturday, crab on Sunday and am planning another crab feast later this week. After all, they are here today, gone tomorrow - Carpe Diem! And slurp, chomp and yum, yum, yum.
